A wine of fragrant notes, sweet and enveloping. The Fiano Passito from Feudi di San Gregorio winery can boast the denomination Irpinia Fiano Passito DOC. Vinified with 100% Fiano grapes. The bunches of this precious vine undergo a drying process. They are placed in small crates and brought to a ventilated room for 8 weeks in order to obtain the necessary sugar content. Then there is the fermentation and the aging in barrique for 6-8 months. Finally the aging for 12 months in bottle.
Characteristics of Passito Fiano Irpina "Privilegio"
The aspect of this wine from Campania shows a crystalline golden yellow color. The nose is evident with soft sensations of dried apricot and small white flowers. The taste in the mouth has the typical silkiness and roundness of great wines enriched, in this case, by a remarkable acidic and mineral shoulder. The finish is long and recalls candied citrus fruits, cinnamon and the skin of white peach.

This wine is perfect to accompany pastry products, especially sweets with creams. It is also excellent with very aged cheeses and with blue marbles. It should be served fresh at 12ºC in a small and tulip-shaped glass.
