The ZERO 140 Riserva Pas Dosé Enrico Serafino is the first Alta Langa wine with extreme aging ever produced: it is thanks to its aging of almost 12 years that this wine acquires the elegance and complexity that distinguish it. Produced with 85% Pinot Noir and 15% Chardonnay grapes, cultivated on the clayey-calcareous soils of Mango, Loazzolo and Bubbio, between Asti and Cuneo. After harvesting by hand, the bunches are carefully selected and pressed in the absence of nitrogen , without the use of augers to safeguard the characteristics of the bunch. The must thus obtained then ferments in steel tanks and for 6 months remains on the lees with batonnage. Then the fermentation takes place following the classic method, with fermentation in bottle, aging on the lees for 140 months and late disgorging.
Characteristics of Alta Langa Zero 140 Riserva Pas Dosé
The organoleptic examination of this wine from Piedmont shows a straw yellow color with golden reflections. The perlage is fine and persistent. The nose has deep hints of candied fruit, honey, hazelnuts. The mouthfeel is complex, buttery and creamy, with a long mineral finish.
