This red wine from Fantini Winery comes from the company vineyards of Cantalupo, Notaresco near Teramo. It is a wine ready to drink immediately but which boasts an excellent aging capacity, even over 20 years. The bunches are harvested in September in the third decade: they are harvested meticulously and wilting takes place in the fruit orchard at a controlled temperature. During the 120 days of wilting, the grapes gradually dehydrate, thus developing the fruity aromas characteristic of the wilting procedure; once this phase is completed, they proceed with soft pressing and fermentative maceration in steel for 6 months at a temperature of 25/30°. The final stage, or aging, takes place in American oak barriques for 18 months.
Characteristics of this Fantini wine
It has a very intense ruby red color with purplish highlights. The olfactory bouquet is rich and complex: it opens with ripe fruit, raisins, blackberry and black cherry and then turns on vanilla and dark chocolate. On the palate it is fruity and slightly spicy with hints of tobacco and licorice.

Try it with game, red meat and long-aged cheeses. Serve at a temperature of 18-20°C.
