The denomination is Franciacorta DOCG of Ferghettina made with 100% Chardonnay grapes. The vineyards are cultivated at 250 meters above the sea level and the soil is clay and limestone. The vines are cultivated with the Guyot method and the density is 5000 trees per hectare. The grape harvest takes place in the second half of August with a manual picking. The grapes are pressed very softly with a pneumatic press. There is a selection of the must and the alcoholic fermentation is made in stainless steel tanks at 16-18°C. The vineyards are vinified separately and assembled in the following spring after several tastings. Then it takes place the re-fermentation. The yeasts refinement lasts 80 months.

The Franciacorta DOCG Pas Dosé has a golden yellow color with a fine and persistent perlage. The smell has citron, yellow pulp fruits and the crust of the bread aromas. The taste is clean and sunny, deep and very long. There are some almond hints for a persistent end.
Suggested pairings with this great Franciacorta Ferghettina
It must be served at 8°C in a high and tapered wine glass. It is perfect with the local cooking and the “Riserva 33” Ferghettina is perfect with fish courses also baked.
