This is the most important product of the Ceci dell’Emilia winery and it is made by 100% Chardonnay grapes. The production of this sparkling Brut Millesimato is the realization of a dream. A prestigious wine bottled in a unique style bottle. After the pressing, there is the separation of the must from the marc after one hour. The fermentation is under temperature control and then the wine must rest up to December-January to clean itself from the impurities. It follows the maturation in French oak barrels and the re-fermentation occurs thanks to the natural sugars of the must.
Characteristics of this Spumante
It has an extremely light straw yellow color with the foam immediately sparse but extremely fine and tiny. The smell has a delicate bouquet of herbs, lightly toasted almond and apple aromas with citron hints. It is elegant and perfectly franc. It has a dry taste, with a great structure, a pleasant acidity and a good sapid aroma that don’t cover the fruity fragrances. It has also a long aftertaste.
Suggested pairings with this sparkling Brut CECI
This wine is perfect as appetizer. It is perfect also as meal wine together with fish, cheeses, culatello and the parmigiano reggiano. It must be served at 7°C in a high and tapered wine glass.
