The "Riserva del Governatore" Extra Brut Millesimato of the Bortolomiol Winery was created specifically by Giuliano Bortolomiol on the occasion of the visit of an illustrious character. It is produced with Pinot Noir and Chardonnay grapes, grown in the vineyards located near Treviso. After the manual harvest, which takes place in the first days of September, we proceed to the vinification in white by soft pressing: The primary fermentation takes place at a controlled temperature through the use of selected yeasts while the fermentation takes place at 6 months in contact with yeasts.
