The "Ius Naturae" Valdobbiadene Prosecco Superiore DOCG of Cantina Bortolomiol is an organic wine, which interprets the desire on the part of the company to conduct a viticulture particularly respectful of the environment and sustainable: the grapes used are 100% Glera, bred in the area of Valdobbiadene. After the harvest at the beginning of September, the wine is vinified in white by soft pressing and primary fermentation with selected yeasts at a controlled temperature takes place. The fermentation takes place at 25-30 days with subsequent aging on the lees for 3 months and for another 2 months in bottle
