This wine is produced with 100% Sauvignon grapes, cultivated on a hill near Caldaro lake. The vineyard, located in the estate “Vigna Castel Ringberg”, is considered a crü. It is located 400 meters above the sea level, on soils characterized by sands and clay and produces 80 quintals per hectare. The wine making process considers the static decanting of the must. Part of it is fermented in steel at a controlled temperature of 18°C and lays on its lees till the spring. The other part represents the 15% of the wine: its fermentation is managed in barriques. The assembly is realized just before the bottling, where a further maturation is developed. 10 days maceration in contact with skins, followed by fermentation in steel at controlled temperature. The malolactic fermentation and the aging are developed both in steel and in 22hl oak barrels.

The organoleptic analysis reveals an intense and shiny straw yellow colour. Its perfume is rich and expresses sensations of mature gooseberry, papaya, elder and vegetables. The taste is rich, harmonious, fresh, long, elegant, structured and persistent.Shiny ruby red colour. Its scent recalls red fruits, like cherry and raspberry enriched by a light spicy sensation of white pepper. The taste is rich and structured. It is characterized by delicate tannins and a fresh and persistent final.

Ideal during happy hours. It goes on well with seafood, crustaceans, freshwater fish and main dishes like pasta. Perfect with “Spaghetti” with tomato sauce and basil. It has to be served at 10°C in a high, tapered wine glass that concentrates the perfumes. The alcoholic strength is 13% Vol.
