Produced with 100% Primitivo grapes, this red wine from the Apulian Polvanera winery originates in the Marchesana vineyard, located near Gioia del Colle: here the grapes are grown on ferrous red soils, with a conspicuous presence of underlying limestone. The harvest takes place manually in the third week of September and precedes the maceration phase which takes 2 weeks; fermentation instead requires a stay in stainless steel tanks for 2 weeks at a temperature of 25°C. Finally, the refinement also takes place in steel for a duration of 24 months, plus a year in the bottle.

Organoleptic examination shows a ruby red color with garnet reflections and an inebriating olfactory bouquet of cherry, plum, tobacco and licorice.On the palate, well present but velvety tannins and a long finish.

Perfect to taste with first and second courses based on meat: roasts, meat sauce, braised meats and game. Also excellent with cheeses. Serve at a temperature of 16-18°C.
