Polvanera

Located in a unique territory, among dry stone walls, vineyards and olive trees, the Apulian winery Polvanera is linked to the territory of Acquaviva delle Fonti and Gioia del Colle, in the province of Bari. The company is now led by Filippo Cassano thanks to the teachings of his father Vincenzo and studies at the school of oenology: always as a key principle of production there is a pure vinification, the exaltation of the autochthonous and the territorial peculiarity of Puglia. The name of the Company derives from the fact that initially in the structure where today there is the winery there was the activity of coal production, therefore the family was nicknamed "polvagnor", that is "black powder" because of the color of their skin in contact with coal; The name then took on the modern form of Polvanera, on the will of Philip himself, who bought the old farmhouse dating back to 1820 and began the renovation works. Today the total production covers a land of about 100 hectares on which are cultivated Primitivo, Aleatico, Aglianico, Minutolo, Moscato and Falanghina with significant differences in the age of the vineyards and the type of land; The vineyards also benefit from significant temperature variations thanks to which Apulian wines develop all their peculiarities. The cellar is also peculiar, dug for 8 m in the limestone rock, a characteristic that allows the aging at constant temperature: the modernity of the pressing and vinification plants have also contributed to the realization of the BIO project.
