This Apulian red wine from the Polvanera winery comes from 100% Aglianico grapes at the Vigneto Marchesana in Gioia del Colle: here the soils are ferrous and with a layer of persistent limestone. The bunches collected during the mechanical harvest in the second week of October are then subjected to maceration for 2 weeks; it is then fermented in stainless steel for 2 weeks at a temperature of 25 ° C. The final phase of refinement requires the stay for 24 months in steel and finally a year in the bottle.
Characteristics of this Apulian wine
The organoleptic test shows a purplish red color with ruby reflections; on the nose the olfactory notes recall plum, black cherry, blackberry and violet with hints of leather and licorice. On the palate there is a dense tannic texture and a long balanced finish between aromatic herbs and licorice.
