The grape variety used for the production of this sensational label is 100% pure Pinot Bianco from old vines aged up to 40 years, grown in espalier or pergola. The origin is the classic one of Alto Adige: the grapes selected for the production of this wine come entirely from the "Eppan Berg" area, the most historically renowned one in Alto Adige for Pinot Bianco. Vinification involves fermentation at a controlled temperature of 18 ° C in wooden barrels of various capacities, followed by aging on the fine lees of fermentation for about 10 months in wood too. At last, the wine is bottled and left to rest for a few months.
