The traces of the sea are set in the limestone rock on which this vineyard stands. The same sea that is found in the savory memory of its ending. A fine wine, mono varietal of Pinot Bianco. The vines are between 10 and 30 years old, they are young and are able to develop a yield of 60 hectoliters per hectare of vineyard when fully ripe. The breeding also in this case follows the classic method in Gujot. The winemaking process involves soft pressing of the grapes, partly whole, partly de-stemmed and macerated. Then decanting and slow fermentation at a controlled temperature of 16°C. This is followed by a period of maturation on the fine lees in steel tanks and, only for 10% of wine, in large wooden barrels for 5 months; finally, filtration and bottling in March. The vineyard is located in a hilly area with an excellent exposure to the east. The altitude is between 500 and 550 meters above sea level. The land rises at the foot of Mount Mendola. Here there are optimal conditions for the ripening of the grapes for particularly fruity and fresh wines. The microclimate is characterized by strong temperature variations with hot days and cool nights, the soil is calcareous-porphyritic clay.
Characteristics of the Vial Pinot Bianco DOC wine
On the organoleptic examination, the Trentino wine shows a straw yellow color. The scent is fruity, fresh with aromas of yellow apple and pear, mineral with hints of walnut and hay. The taste on the palate is characterized by a lot of fruit also on the palate it is sapid with a well integrated acidity and a long persistence.
