Mesa produces this sensational red wine from the Carignano grape variety, native to the Sulcis area of Sardinia. The production area is that of the territory of Sulcis, in the south-west of Sardinia. The harvest falls in the third decade of October. Vinification follows after the grapes dry naturally in the plant until the end of October. After crushing, the must is macerated for about 10 days together with the skins. After separation, the must continues to ferment in steel until the natural fermentation block. The maturation begins in tonneaux of 3 kg. and 4 kg. passing for 9 months and is perfected with at least another 3 months in the bottle.
Characteristics of this Sardinian passito
The appearance of the wine has a garnet red color enlivened by ruby nuances, impenetrable. The nose expresses hints of marasche macerated under spirit and blackberry and cassis jam, notes of green olive and aged olive wood, licorice and cocoa, and balsamic nuances. The taste is sweet, in the mouth is alcoholic, soft, enlivened by an unexpected freshness, with very light tannins and a certain sapidity.
