This Passito di Pantelleria from the Sicilian Florio winery is made up with 100% Zibibbo grapes, grown in the vineyards on the island of Pantelleria. Immediately after the manual harvest in September, the overripe grapes are further left to dry in the sun. After pressing comes the must which then is left to ferment at a controlled temperature. The aging takes place in oak barriques and the refinement foresees at least 6 months in the bottle.
Characteristics of this Sicilian wine
At the organoleptic examination this wine shows a luminous gold color; the nose is intense with olfactory notes ranging from ripe yellow fruit and hints of vanilla. On the palate it is soft and full, with good persistence.
Suggested food pairings while tasting this Sicilian wine
Excellent with dry pastries, fruit and ice cream. To be served at a temperature of 14-16°C in a tulip glass.
