From the vinification in purity of grapes typical of the Sardinian hinterland, the Carignano vine coming from the farms of Cantina Mesa in the production area that falls in the territory of Sulcis, in the south-west end of Sardinia. The harvest takes place between the end of September and the beginning of October. The vinification foresees that the grapes are only destemmed and maceration, during fermentation, is prolonged up to 18 - 20 days, taking care to maintain the fermentation temperature always between 24 and 28 ºC. The wine is aged in part in barrels and barriques of 23 year pass for 12 months and partly steel. It is then assembled in cement tanks, where it rests for at least 6 months. The maturation is completed by a minimum of 6 months in the bottle.
Characteristics of this Sardinian wine
The wine has an intense ruby red color. The scent lets flow its olfactory notes marked by fresh and balsamic tones, with hints of ripe red fruit and roses. The taste in the mouth stands out for the body and the juice, set in a soft and velvety perception.
