For this Franciacorta DOCG label from Le Marchesine winery, 100% Chardonnay grape is used in the vinification phase. The Provenance is included in the business areas of the "Marchesine" of Biatta Giovanni & C. on the administrative territory of Passirano, Brescia. The harvest includes entry into the vineyard with manual collection in boxes of maximum 18 kg in September, then the grapes coming exclusively from our vineyard of La Santissima di Gussago are conducted in the cellar for white vinification in pneumatic press with soft pressing of the whole grapes and use exclusively of the 1st fraction. After static and physical separation from the impurities of the must at low temperatures, the yeast is inoculated for fermentation in stainless steel tanks at controlled temperature. This is followed by decanting and lowering of the temperature to about 10ºC to avoid malolactic fermentation. Once the "tirage syrup" has been added, it is bottled, capped with the crown cap and laid down in a pile for foaming.
Characteristics of this Franciacorta Brut Millesimato Docg
The appearance of the wine has a brilliant straw yellow color, with a fine and very long perlage. The nose is characterized by scents of toasted hazelnut, margarine, menthol notes and candied cedar. The taste is enveloping and round, in the mouth reveals great balance between acidity and sapidity. The finish is impeccably elegant.
