Wine list | Barolo Chinato |
From the 100% pure vinification of the prestigious Nebbiolo grape variety. The vinification provides that the aromatized wine "Barolo Chinato" must be produced starting from Barolo wine that has already finished the minimum period of aging and that has passed the physical and organoleptic chemical examination provided by the production specification. The aromatization is carried out by cold infusion in hydroalcoholic solution of bark of china calixaia, gentian root, cardamom seeds and other minor spices such as vanilla berries. To the wine is then added the aromatic infusion, sugar and alcohol to bring it to the strength of 16.5% Vol and the sugar content of 18% ideal for a good harmonization of the product. For the aging of the wine after its preparation, Barolo Chinato is aged at least one year in cask before being bottled and put on the market, so that all the aromatic parts of the infusions have time to amalgamate in a single homogeneous and harmonious sensation. With time it continues its aging in bottle that increases the softness to the taste and improves the aromatic sensation.
Characteristics of Barolo Chinato
On organoleptic examination it has a garnet red appearance with orange edges. The perfume is rich and intense aromatic reminiscent of the oriental spices with which it is produced. The taste is broad and warm, full, sweet and aromatic with a afternasal sensation that clearly recalls the scent. The persistence of the taste leaves at the end the pleasantly bitter note of gentian.
