This is a particular wine for the Sicilian tradition and it is the result of the wise experimentation of the farmers of the Mandrarossa winery. The Cabernet Sauvignon vine in fact is perfect for few fertile soils, rich of stones which give a mineral taste to the wine. They are cultivated in the south-west of Sicily in the Menfi town in the Agrigento province. This wine is made by 100% Cabernet Sauvignon grapes and it has the Rosso Sicilia DOC certification. The soil cultivation is rich of clay. The profit is 80 quintal per hectare and the density is 4000-4500 trees per hectare. The cultivation is located at 150-250 meters above the sea level. The wine making process starts with the maceration of the grapes for 8-10 days at 22°C. It follows the maturation for the following 3 months in steel tanks at 10°C and finally it takes place the bottle aging for 3 months.
Characteristics of the Cabernet Sauvignon "Serra Brada" DOC
This cabernet Sauvignon Mandrarossa has a medium intense purple color. The smell is rich of sage, rosemary and eucalyptus. The taste is mineral and soft with thin tannins that reminds the sage and the rosemary. It must be served at 18°C in Ballon wine glasses.
