This fabulous Sauvignon by Muzic praises the denomination white wine DOC and is produced in the area of Collio, specifically in the district of San Floriano del Collio, that includes Località Asci and Località BIvio. It is composed by 100% Sauvignon, cultivated on hills soils characterized by marl and sands of Eocenic origin. The plants are trained with traditional guyot method and produce 60 quintals per hectare. The manual harvest starts within the second decade of September. The wine making begins with the elimination of stalks and a period of maceration, managed at 15°C for 12 hours. Then the soft pressing and the purification of the must through static decanting. The alcoholic fermentation, that lasts 8-10 days, is managed through a continuous control of the temperature, that is set on 16-18°C. The aging on lees is developed in steel containers and consists in continuous “bâtonnages” that last for 4-5 months.
Features of the white wine “Collio Sauvignon Pajze”
The organoleptic exam shows a straw yellow colour full of green reflections. Its scent is deep and persistent; It is characterized by tropical fruits, pineapple, pepper, tomato leaves, sage and mint. The taste is light, fresh and balanced.
