Barolo DOCG is one of the best red wines from Piedmont. Vineyards which give life to this great wine are 100% Nebbiolo Barolo. This wine is made from grapes gathered in October. Bunches are placed in cellar, in red wooden cases. Fermentation takes place in stainless steel vessels at a temperature of 28-30°C, then wine is moved in barriques of 50 hl, where Barolo will remain for 24 months. Then, wine is bottled and an 8 months rest period in cellar is needed.
Characteristics of Barolo wine
Barolo DOCG presents a red ruby colour with shades that make it full and intense. On the nose, this is a fruity wine: raspberry, vanilla and cherry stand up among a variety of notes. It’s a structured wine with an excellent length. In spite of its 15% strength, it proves to be very balanced. Bottle aging is excellent: over the years many flavors will rouse.
Recommended pairings while tasting this red wine
It should be served in a wide crystal glass at a temperature of 18°C. Decantation is suggested two hour before serving. It can be paired with grilled or stewed red meat, game meat, aged cheeses and pasta with meat sauce.
