The Montefalco Rosso of the Petricaia winery has the DOC certification. This very important label is the union within the food and wine element of this territory, and the territory itself. This red wine is produced with 70% Sangiovese, 15% Sagrantino and 15% Colorino grapes. The harvest depending on the grapes, takes place between the half of September and the half of October. It follows the maceration of the grapes which lasts from 1 to 2 weeks, depending on the grapes, but always under temperature control. It starts from 30°C during the fermentation, then 2°-28°C during the maceration on peels and finally at 20-22°C during the natural malolactic fermentation. The aging period lasts 18 months where 12 in stainless steel tanks and 6 in bottles.

The organoleptic characteristics underline a quality and excellent wine. It has an intense and deep red color. It has a tangy and penetrating taste, particularly winy and fresh with marked mixed berries flavor such as the raspberry and blueberry. The taste is full with light tannins, rich in the body and persistent in the taste.
Suggested pairings with the rosso di montefalco wine
The ideal match with the Montefalco Rocco DOC of the Perticaia winery is with cold cuts but also with Umbrian and Mediterranean main courses. It is perfect to be aged and it can achieve 5 aging years. It has to be served at 18°C in Ballon or Bordeaux wine glasses for the diffusion of the fragrances. If aged it needs a short settling time.
