A wine that represents all the essence of the territory of Alba, a territorial area within which the renowned Ratti winery has been operating for almost 100 years. For the vinification of this Barolo are used Nebbiolo grapes alone as required by the strict disciplinary. The harvest is carried out during the month of October to ensure the grapes the correct degree of ripeness and sugar content. Immediately carried out in cellars the grapes follow the process of destemming - crushing to separate the pomace from the berries. Then the alcoholic fermentation at a controlled temperature of about 30ºC. The average maceration time is 7-10 days. Malolactic fermentation takes place in November in wood. About two years in oak barrels of 25hl and 50 hl.
Characteristics of this wine from Ratti Winery
The appearance of the wine is garnet red. The perfume is rich in intense aromas that develop on the nose highlights floral, fruity and spicy notes, which coexist in a perfect bouquet. The taste in the mouth is full-bodied, round, powerful, with well worked tannins.
Recommended pairings tasting Barolo Docg
An excellent wine with meat on a spit and with recipes based on game, is also to be tried with mature cheeses. Perfect with a roast veal with hazelnuts. The optimal serving temperature is 18ºC in a large glass that allows the wine to oxygenate.
