From 100% vinification of Nebbiolo grapes. The origin of the grapes is that of the Langhe area. The harvest takes place from 15 September to 05 October. Then follows the vinification with fermentation. Langhe. Fermentation of about 15 days at low temperatures, 24-28ºC, light pressing and aging in large Slavonian oak barrels for 10 months, at a natural temperature of 18ºC, finally a refinement of about 3 months in the bottle. This classic process allows the maintenance of freshness and fragrance of fruit and spices, in a wine to drink, fragrant of typicality and elegant like its land.
Characteristics of the Langhe Nebbiolo from the Borgogno winery
In appearance, which is highlighted by the organoleptic examination, it has a clear ruby red colour and is bright to the eye. The perfume is characterized by a refined bouquet, it is not one of the common ones, but lets perceive rich nuances that refer first to cherries, strawberries and ripe red fruit in general, and then recall the tertiaries of cinchona and undergrowth. The taste is fresh and balanced, with tannins well present but still perfectly integrated into the texture. The finish is persistent and slightly mineral.
Suggested foodpairings while tasting this red wine
Nebbiolo di Borgogno is an excellent wine to pair with entire menus of the land cuisine. Perfect with tagliatelle with meat sauce. The serving temperature is 18°C in a large glass.
