Produced in very limited numbers, this Barolo Chinato from the Piedmont's winery Roagna is based on an old family recipe: infusions of Barolo grappa made from flowers, herbs and bark are added to the Barolo Pira destined for the Riserva. In ancient times, in fact, every family in the Langhe had the tradition of developing a particular elixir recipe, based on family tastes and available products; the end of the 19th century saw the advent of chinato in the Langhe, thanks to the contribution of Dr Cappellano, a pharmacist from Serralunga d'Alba, who invented it for curative purposes.
Characteristics of this Barolo Chinato
On organoleptic examination, it has a very intense ruby red colour. The olfactory bouquet is typical of Barolo: withered violets, small red fruits and spicy notes. Thanks to the presence of the particular infusion, candied fruit and mountain herbs also emerge. On the palate it is velvety, persistent and with a slight acidic streak. a salient feature is its slightly bitter finish.
