This ancient recipe that the Cesare Pio winery has been able to interpret in full respect of the ancient tradition involves the use of Barolo. For about 21 days, small pieces of China Calissaia and China Succirubra bark are left to macerate in an infusion of alcohol and a very small amount of our "classic" Barolo. Then we add a blend of flavoring spices including gentian root, rhubarb, cardamom seeds, sweet and bitter orange, cinnamon and others, which create our “historic” Family Recipe. Finally, the right amount of our "classic" Barolo, a little sugar and alcohol is added to the aromatic extract thus obtained and left to refine for at least 4 months in small stainless steel containers. After resting in the bottle for at least 2 months, our Barolo Chinato is ready to be tasted in the "Piedmontese way", that is, after meals as a digestive.
Barolo Chinato Pio Cesare’s features
An intense ruby red colour. The perfume on the nose, very strong, is expressed with hints of sweet spices, balsamic notes and bitter tones. The taste on the palate is warm, soft and persistent.
