The production area is “La Tour di Aymavilles” in the Aosta province at north. The vineyards are 15-20 years old and they are cultivated on slope morainic, loose and sandy soils which are exposed at west at 650 meters above the sea level which is a very hard cultivation. The vines are extended for 1 hectare and they are cultivated with the Guyot method. The trees density is 8000 units per hectares with an annual profit of 8000 kg per hectare. The manual grape harvest takes place in the second half of October. The fermentation lasts 10-12 days. This process takes place in stainless steel tanks at 28°C. During this process, there are mechanic pumping over. The aging lasts 12 months in little oak barrels of 300 liters. The final aging lasts 6 months in bottles which are kept in the producer cellar. This particular and refined vine born in the main symbolic area of the winery where is located an ancient Middle-age tower of the XV century. These period the Aosta nobility built many castles and forts. At the end of the XVIII century the tower was used by the Savoy, Piedmont and Aosta duke Vittorio Emanuele, as personal apartment of the hunting.
Characteristics of the Syrah Valle d’Aosta "Côteau La Tour" DOC
This wine has a ruby red color with a deep and austere garnet hint. It has fruity and penetrating aromas with berries flavors such as black berry and blue berry and some green pepper hints. It has an Harmonic taste very warm, full and characterized by a spicy aroma typical of this variety.
Suggested pairings with this red wine from Valle d'Aosta
This wine is perfect with cheeses soups, medium and long aged cheeses such as toma and fontina, with red meats, game and braised meats. It has to be served in Gran Ballon or Borgogna wine glasses for the perfumes diffusion.
