Wine list | Collio DOC |
From the skilful blending of prized grapes of Sauvignon Blanc, Friulano, Chardonnay and Ribolla Gialla. All grape varieties are sourced within the estate's Friuli Venezia Giulia region. Vinification involves harvesting the grapes by hand at the time of full ripeness and pressing them softly. The must passes into 500-600 litre wooden casks, where fermentation by indigenous yeasts begins. The fermentation phase lasts about 15-20 days and ends when malolactic fermentation is almost complete. The wine is then racked and the ribolla gialla part is added to the mass, which is vinified separately. Maturation in wood follows for 12 months and then bottling.
