Wine description
Vin Santo Occhio di Pernice di Badia a Coltibuono is a passito of Sangiovese grapes. The territory is that of Monti in Chianti, in the province of Siena: since 1846 the Stucchi family has been running the company in Badia a Coltibuono, producing quality wines in the wake of tradition but also in respect of the environment; all the wines produced by this company have in fact the BIO certification. After the manual harvest, the bunches are left to dry on mats in well-ventilated rooms for a few months and then ferment in sealed oak barrels. Fundamental to the achievement of an excellent product are the changes in temperature to which the barrels are subjected. Ageing lasts for 10 years.
