The Prior is a Valdobbiadene Prosecco Superiore DOCG Brut Millesimato of the Bortolomiol Winery, whose name recalls the intuition of Giuliano Bortolomiol who first created a Brut sparkling wine when the Prosecco of Valdobbiadene was still only Extra Dry. After the manual harvest in September, it is then vinified in white with soft pressing and primary fermentation with selected yeasts. It then passes to the fermentation at 25-30 days and finally to the aging in bottle for 3 months.
