This is the most recent interpretation of the Soave Bertani wine. The Sereole is a Soave with an exuberant and clear personality. It is exclusively produced by Gargànega grapes the most elegant white local vine from Verona cultivated in the Sereole vineyard a real cru located between Soave and Monteforte d’Alpone. The grape harvest, quite late, together with the fermentation of the must in big oak tanks add freshness and a sapid taste perfectly mixed with the wood aging which give softness and complexity. The cultivation method is the trellised from Verona with a density of 3000 hectares and with the classic trellised method with a density of 5000 trees per hectare. After the destemming and the soft pressing with a partial cold contact with the peels at 7°C, it follows the fermentation at 16°C in French oak barrels of 75hl. Finally, the maturation takes place with the end-fermentation yeasts in the wood barrels for six months. At the end, there is the bottle aging for three months.
