This is the symbol of the Bolla winery from Veneto. It is made by 85% Garganega and 15% Trebbiano del Soave grapes cultivated with the pergola method. The vineyards are 25-30 years old and they are located on marl-tufaceous soils in the classic hill area, previously volcanic in the Monteforte d’Alpone town. The exposition is south, south-east and the soils are located at 200-300 meters above the sea level. The manual grape harvest takes place in October to guarantee the correct picking of ripen grapes. After the destemming there is a cold maceration for few hours and they are softly destemmed. There is a cold static sedimentation. The fermentation is slow at low temperature at 12-14°C. The wine rests on the fine lees of fermentation with a regular batonnage while a little part matures in French oak barrels. It follows the bottling in march and an aging period of 2 months.
Characteristics of the white Soave Superiore “Tufaie”
It has a straw yellow color with golden reflections. The smell has hawthorn flower and elder aromas together with white ripen fruits hints. The taste is full, soft, round and persistent with mineral aromas integrated to the most classical sweet one of the Soave. It is particularly intense, with body and importance and with a great aging potential.

The Soave Superiore Tufaie is perfect with crustacean, delicate fishes but also white meats. It must be served at 14°C in a tulip wine glass and the proof is 15%.
