The Sauvignon Blanc "Valbuins" of the Livon Winery was born in the vineyards of Valbuins, in the municipality of Dolegna del Collio. The vine used is 100% Sauvignon Blanc, cultivated on soils of marl and clay. The harvest is done exclusively by hand, with cold maceration for 8 hours and subsequent decantation to obtain the cleaning of the must. Then fermentation takes place in steel tanks at a controlled temperature: the product obtained for 8 months remains to mature in the tanks themselves; then it is proceeded with assembly, bottling and aging in the bottle.
