From the vinification of Sauvignon Blanc grapes, the origins of this wine date back to many years ago, when some wine pioneers had the intuition of planting vines of this ancient French variety on the sunny eastern slopes at 500 m u.s.l. The provenance is the classical one around Castel Lebenberg above the town of Cermes. The vinification involves cold maceration for 12 hours, followed by alcoholic fermentation at a controlled temperature in small stainless steel and oak wine tanks. The aging of the wine takes place for about 5 months on the lees.
Sauvignon Blanc Mervin DOC’s features
A greenish yellow colour. It looks like a wine that has the exuberant scent of elderflower and red currant. The taste is that of a very elegant and intense wine with a velvety and long finish.
