The Sauvignon Blanc of Azienda Agricola Livon is produced in the vineyards of Dolegna del Collio. The variety used is 100% Sauvignon Blanc cultivated on soils of marl and clay. The harvest is done exclusively by hand in boxes, with cold maceration for 8 hours and subsequent decantation to get to the cleaning of the must. The fermentation takes place in steel tanks at controlled temperature and the product is left to mature in the same tanks for 5 months. It is then bottled and aged in bottle.
