Fontanafredda is a Piedmont winery that produces this sensational 100% pure Arneis wine. The production area is that of Monteu Roero, Vezza d'Alba and Montà d'Alba. The vinification provides that the grapes are delivered to the cellar in 20-kilo crates. 20% of the grapes are destemmed, pressed and cold macerated for 24 hours at a temperature of 10ºC. At the end of the maceration is carried out the soft pressing of the grapes by pressing. At the same time, the remaining part of the grapes is placed directly in the press without pressing and thanks to a soft pressing, the must is separated from the skins. The must obtained from the two production methods is kept separate in temperature-controlled stainless steel tanks, where the fermentation takes place at low temperature (18-20°C) after refrigeration and static decantation of the must. At the end of fermentation, the wine obtained from cryo maceration is added to the wine produced with the traditional system and stored at a temperature of 5ºC to avoid malolactic fermentation. The aging of the wine develops in steel for 4-5 months at low temperature, keeping it on the fine lees to increase the aromatic complexity and the sensation of volume. After cold stabilization it is bottled before summer.
Characteristics of this white wine from Piedmont
The wine has an intense straw yellow color with greenish reflections. The aroma opens with a bouquet reminiscent of the scent of exotic fruits, ripe pear of hawthorn flowers and acacia honey. The taste in the mouth is pleasantly wrapping, soft, sweet with acidity that gives freshness and flavor to the aftertaste.

An excellent wine in the company of second courses of a certain importance, preferably based on meat, even not too elaborate, cold cuts and medium-aged cheeses. The optimal serving temperature is 8°C in a high and wide glass.
