The vinification of 100% Cortese grapes. Fontanafredda winery, symbol of Italian food and wine quality, breeds the grapes for the production of this label in the municipality of Gavi. The vinification begins with the soft pressing of the grapes, immediately separating the must from the skins. Fermentation is conducted at a low temperature of 18-20ºC in stainless steel tanks, after refrigeration and static decantation of the malolactic must. The wine is aged in steel tanks for about 2-3 months on the lees of the lees, then, after a cold stabilization intervention in spring, it is bottled.

The organoleptic analysis of this sensational wine shows a straw yellow color, with greenish reflections. The aroma is broad, with an intense bouquet reminiscent of flowers, lemon, lily of the valley and unripe apple. The taste is pleasantly dry, full and harmonious, elegant.
