The vinification in purity of Pinot Noir grapes. The vineyards with an age between 5 and 20 years that manage to develop a yield of 70 hectoliters per hectare of vineyard. The training system is the classic one of Trentino with the Pergola and the Gujot espalier. The etymology for this vineyard in the Trentino area of Caldaro indicates that the Black Pine has many different names internationally. In Germany, this grape is known as Spätburgunder, for example, in France known as Pinot Noir and in South Tyrol as Blauburgunder. The vinification involves fermentation on the skins with eight days maceration at a controlled temperature of 23°C; malolactic fermentation and maturation of 7 months in large wooden barrels and concrete barrels. The vineyard is located in a hilly area with an eastern exposure between 450 and 550 meters above sea level. The soil is calcareous, clayey of medium texture.

The scent is fruity and reminiscent of cherry and raspberry, the spicy hints of cinnamon are especially noticeable in the finish.
