This Pinot Grigio comes from the Caldaro Winery, Trentino Alto Adige. The type of grapes used is 100% pure Pinot Grigio. The vines are 10 to 15 years old, with a yield of 60 hectoliters per hectare of vineyard. The vinification involves a soft pressing of the whole grapes, ripe and healthy; the slow fermentation at a controlled temperature of 18 ° C involves a passage in large barrels of Tonneaux for 20% of the product. The maturation on the fine lees happens for a further 5 months, then finally filtration and bottling in March. The vineyard, stands in a hilly area, is facing north-east, 250 meters above sea level.
