“Canthus” in the local language means "hill", place where the sweet grapes of this sensational wine grow, secretly kept in the cellars of Colterenzio. The place where these precious vines are grown is located on the hills of Cornaiano, in South Tyrol. The origin is the classic DOC Alto Adige, the vineyard are situated at an altitude of approx. 450 m. upon the sea level. Dry sandy-gravelly soils of moraine origin of medium structure. Vinification involves that the ripe grapes are harvested just before the beginning of winter. The passage in the press is carried out by hand and with great care, after 24 hours of cold maceration. A natural sedimentation of the must is followed by fermentation at a controlled temperature of about 16°C for a few months. One year after the harvest, the wine is carefully bottled.
Passito Canthus Colterenzio’s features
A golden yellow colour. It is a wine of high concentration and intensity. On the nose, the scent is reminiscent of exotic fruits such as mango and pineapple. The dried fruit and caramel notes are also clearly recognizable. The taste in the mouth arouses an incredible variety of sensations: freshness, liveliness, elegance and fullness.

Excellent paired with desserts and blue cheeses but also with foie gras. The optimal serving temperature is 10 ° C in a small tulip-type glass.
