Made from 100% pure Sauvignon grapes. The grapes come from the municipalities of San Floriano, Oslavia and Cormòns, in the Collio DOC area, at an altitude of 250 m, 150 m and 80 m above sea level respectively. The vinification and the subsequent fermentation started after the harvest of the grapes that are separated from the stalk; it proceeds with the juice and pulp that undergo a cold maceration, then a slight pressing that allows the separation from the skins. Fermentation in steel tanks follows. The aging of the wine requires that it is left to rest about six months on the lees and a few months in the bottle.
Characteristics of this white wine
On organoleptic examination it has a golden yellow appearance with greenish nuances. The aroma is of good intensity and freshness develops in scents reminiscent of sage, fresh pepper and elder. The taste has a good acidic note, giving freshness and flavor.
Suggested food pairings while tasting this white wine
A perfect wine to accompany seafood and shellfish, it is ideal in combination with dishes based on mushrooms and white meat. The optimal serving temperature is 10 ºC.
