A refined wine result of the collaboration between Dolce&Gabbana and Donnafugata that for the occasion strengthen their partnership giving birth to Rosa. The vinification involves the use of grapes of Nerello Mascalese, Nocera in equal percentage. Nerello Mascalese is cultivated on volcanic soils, at high altitude, is able to express minerality and a refined floral component. It is very suitable for the production of rose wines which are characterized by the pale pink color due to the low level of anthocyanins present in the skin. The Nocera is an ancient almost forgotten variety, from the prestigious past. After years of experimentation that proved its excellent potential, Donnafugata planted it in his hilly vineyards. The Nocera was chosen because it reaches an ideal sugar maturation with a high level of acidity; the result is a fragrant and persistent wine, with an attractive fruity bouquet. The production area is that of Eastern Sicily on the northern side of Etna South West Sicily, Tenuta di Contessa Entellina and neighboring territories. The vinification involves the cold maceration in the press for 6-12 hours at 10ºC followed by a fermentation in steel, at controlled temperature. The aging takes place in tanks for two months and at least three months in bottle before being marketed.
