In this case, Chardonnay variety is the protagonist. The grapes come from two “single vineyards”, property of Elena Walch winery. The date of the harvest can vary from one year to another, depending on the perfect maturation of Chardonnay variety. In this case, the fruits are harvested and worked the same day. After the fermentation, a “battonage” is planned each week, for 3 months. The wine ages in French barriques for 10 months. At least 6 months maturation in the bottle.

The organoleptic aspect shows an intense straw yellow colour. Its perfume includes floral and fruity hints in a complex bouquet that recalls pleasant spices.
