The Soave DOC of the Allegrini winery is a delicate and refined wine composed by a blend of 80% Garganega grapes and 20% Chardonnay grapes. The production takes place in Valle di Mezzane in a light hilly territory at 150 -250 above the sea level. The vines exposition is South-west and the ground is mostly calcareous with volcanic origins and the vines are cultivated with the classical French Guyot method. The harvest takes place at the end of September and in the first decade of October. It follows a soft pressing of the grapes that lately they pass across the cold maceration which means that there is a maceration on peels for 18 hours at 10°C. The alcoholic fermentation takes place in stainless steel tanks of 200 hectoliters at 15°C for 10 days. Finally the refinement lasts 4 months in steel tanks and 2 months in bottles.

The Soave DOC white wine of the Allegrini winery has a proof of 12,93% and an acidity of 5,37 grams per liter. The remaining sugars in a liter are 3,7 grams and the dry extract is about 21,1 grams per liter. The Ph value is about 3,32. The name of this wine reminds its soft and delicate character, elegant and refined. These characteristics give it freshness and aromatic flavors. The refinement in steel marked the balanced mineral taste. It has a bright straw yellow with countryside aromas, in addition to pink grapefruit and cedar ones. Its aromatic persistence is an indicator of a good resistance to the time.
Suggested matches with this white wine
It is very good as appetizer with a caviar canapé and carpaccio of fume fish, olive and mushroom pâté. It is very good also with saffron and celery risotto, oil dip and olives at ascolana. It is very good also with raw fish such as tempura, sushi and sashimi and in general with Asiatic food and also with grilled fish and lobster. Also with pizza is excellent. It has to be served at 8°-10°C and it doesn’t need any settling time.
