The sparkling wines prestigious line of the Trentino house proposes this marvelous and refined brut wine label, Grande Cuvée Brut. This sparkling wine's excellent qualities are the perfect match for glamourous events and celebrations of successful events. A subtle and fresh wine with intense scents. It is exclusively composed of White Pinot grapes trained according to the enterprise of medium-height hills of Caldaro, covering a range of altitudes between 500 and 700 metres above sea level. The lands' features allow an excellent development of Grey Pinot grapes, lands which are generally dissolved of limestone origin, with a high clay content and the presence of organic matter. The training method is Trentino's typical pergola with espalier. The planting density reaches a maximum of 3.5000 plants for hectare of land when it comes to pergola training and 6.000 plants for hectare when concerning espaliers training. The harvest takes place in September and ends towards the end of October. Grande Cuvée Brut vinification is in white with soft pressing of the grapes and fermentation at a controlled temperature of 16-18°C. The refinement takes place is stainless steel until spring, on the first fermentation yeasts. In the spring following the harvest, saccharose (about 24g/l) and selected yeasts are added to the basis of the wine and it is left to ferment again in autoclaves at a controlled temperature of 11-12°C. Once ended the second fermentation, the product ripens on the yeasts for at least 9 months according to the long Charmat Method protocol, before being bottled and put on sale. Liquer de tirage is then added to the basis of the wine, placed in crown capped bottles and piled in the wine cellar at 10 – 12°C where the second fermentation takes place. Once this second phase is ended the product remains on the yeasts for 24 months at least, before being degorgèe and put on sale.
Characteristics of this wine
Grande Cuvée Brut sparkling wine reaches a 12,50% alcoholic gradation by volume and is suited for a maximum of two years aging. Concerning the organoleptic level, Grande Cuvée Brut's tasting notes give us the chance to admire a relaxed straw yellow tone, with fine and persistent perlage. It stands out for its fresh, fruity and slightly aromatic fragrance, with very balanced yeast scents. The flavor is dry, intense, solid and of good persistence.
Reccomanded pairings while tasting this wine
Kettmeir's Grande Cuvée Brut sparkling wine is ideal as aperitif wine; in terms of dishes it goes great with seafood and vegetables. It's rather interesting and distinctive on fresh fromages. At its best if poured into medium-size tulip calyx glasses at a temperature of maximum 6° C.
