The Valdobbiadene Prosecco Superiore DOCG 52 is the main product among the sparkling wines of the Santa Margherita winery. The cuvee is put in autoclave to ferment at 13°C to preserve the aromatic potential and to guarantees an optimal expression of the yeasts. Once got the over-pressured desired and the residual sugars, it takes place the inhibition of the yeasts. The sparkling wine stays in autoclaves with yeasts for about three months and then it is prepared to be bottled. The Glara grapes are vinified pure and they come from the DOCG Valdobbiadene area. The soil has moraine origins and they are located at 300-500 meters above the sea level. The vineyards cultivated with the Sylvoz method has a density of 4000 trees per hectare and the grape harvest takes place at the half of September to achieve the right sugar content.
