This wine of the Tuscany tradition is produced by the Banfi winery in the south slopes of the Montalcino’s hills. The soils are located at 220-230 meters above the sea level and depending on the different vines have different characteristics. For the Cabernet Sauvignon the soil has a brown light olive color clay with limestones. For the Merlot the soils are brown-yellow sandy with limestones with abundant stones and for the Sangiovese the soil is the same of the Merlot’s. It is made with a blend of Cabernet Sauvignon 30%, Merlot 30%, Sangiovese 25%, and Syrah 15%. It is cultivated with the cordon spur pruning with a density of 4200 trees per hectare and a profit of 70 quintals. There are four wine making methods: there is the pre-fermenting maceration at 14°C for 2 days in steel and horizon wood barrels. It follows the maceration at 22°C up to the last two days when the temperature is put at 27°C. It follows the alcoholic fermentation and the wines are poured separately in barrels for the malolactic fermentation for 6 months. Finally, they are assembled and it rests for 6 months in barrels and 6 months in bottle.
Characteristics of the Cum Laude Toscana wine
It has an intense and deep ruby red color. The smell has blackberry, prune and cherry aromas with licorice, black olives and tobacco. The taste is powerful with many tannins which are wide and soft thanks to the good maceration.
