With 100% Moscato grapes, Banfi produces one of the best Moscato of the Italian tradition. The wine making considers the fermentation in inox, managed at controlled temperature for 12-14 days. The malolactic fermentation follows. The aging is developed in wood for 10 months and then in the bottle. The vineyards are cultivated on soils characterized by marls and limestone. These features, joined to the micro-climate are important factors for the maturation of the grapes. After the soft pressing, the must is preserved at low temperature till the foam formation and the bottling. This technique helps to obtain a fresh, fragrant wine with great aromas.
