From the name of the characteristic forest located in the salemi area, Angimbè was born, a particularly fruity and fragrant wine made from a blend of Chardonnay and Sauvignon Blanc grapes: these are two grape varieties typical of a mountain terroir that meet in Tenuta Ficuzza, Piana degli Albanesi, where the vineyards are surrounded by woods, at an altitude of 700 m above sea level. After the manual harvest of the first ten days of September, the winemaking phase proceeds: the maceration of the skins takes place cold for 12 hours at 8°C, followed by pneumatic pressing and cold decanting and finally fermentation at 18-20°C. The final stage of refinement requires a steel stop on the fine lees for 4 months with further final refinement in the bottle.
Characteristics of this Sicilian wine
It has a straw-yellow phial color and olfactory notes reminiscent of white flowers and spices. On the palate it is complex, refined, fresh and with a beautiful persistence.
