This Franciacorta Brut Millesimato comes from Chardonnay grapes from vineyards with an average age of 20 years: its salient characteristic is a strongly savoury character, thanks to the silty clay soil that the vineyards feed on. The harvest is carried out manually between late August and early September, with the bunches harvested in small wooden crates. Once the harvest is complete, the bunches are placed in a refrigeration cell for 24-36 hours, promoting better extraction of the aromas. This is followed by soft pressing of the whole bunches and fermentation at a controlled temperature between 15-17°C. Ripening on the lees takes 6 months, entirely in steel. Final bottle aging on the lees for 48 months.
Features of this Franciacorta Lo Sparviere
It strikes for its fine, continuous perlage and a bright straw yellow colour. The olfactory notes recall rusks, acacia honey, candied fruit and bee cer4a. On the palate it is fresh, balanced and slightly citrusy.
